Another Mexican Pizza

We made a mexican pizza a long time ago.

It was yummy.

 This one  is yummier.

 Another Mexican Pizza

inspired by Pioneer Woman

4 boneless skinless chicken breasts

1/2 cup salsa

1 package taco seasoning

1. Throw first three ingredients, reserving about 1/2 the packet of taco seasoning, in a crock pot and cook for about 3 hours- shredding chicken with about 45 minutes left.

1 tube refrigerated pizza dough

1 can black beans – drained and rinsed

1/2 cup Pepper Jack cheese

1/2 cup Sharp cheddar cheese

1 cup tomato-diced

1 cup spinach- shredded

1/2 cup greek yogurt (or sour cream but I think that is yuck)

1 teaspoon chipotle Tabasco sauce

1. Preheat oven to 400 degrees. In a bowl, combine black beans and taco seasoning. Mush with a potato masher.

2.  Spread pizza dough on pizza stone.  Top with bean mixture, spreading evenly to the crust.

3. Add meat and cheese and cook for 6 minutes. Add tomato and spinach and cook for another 7 minutes or until crust is crisp.

4. In a bowl, combine greek yogurt and hot sauce, mixing. Put mixture in a plastic bag, snipping a little hole in the bottom and drizzling over pizza when cooked.

Enjoy!

Spinach and Artichoke Pasta

I have seen this recipe on Pinterest like 8 million times.

I always mean to pin it but get distracted but something…

usually another ceramic owl.

But I finally put a pin on it today.

And luckily we had most of the ingredients that it called for.

Spinach and Artichoke Pasta

1 box whole wheat pasta (I used shells)

1 tbsp olive oil

1 can artichoke hearts

2 cups fresh spinach

1 cup chopped rapine (I had to get rid of it)

1 cup chopped onion

3 cloves of garlic-minced

1 cup ricotta (she used sour cream but I have issues with sour cream)

3 wedges of laughing cow garlic and herb cheese

1 cup six cheese Italian blend

1 cup mozzarella cheese

S&P

1/2 tbsp chili powder

1/4 cup cooked pasta water

1. Boil pasta according to package directions. In a skillet, add olive oil, onions, and cook for 5 to 8 minutes or until soft. Add garlic and cook for another minute.

2. Add rapine, and spinach to onion mixture and cook for 2 minutes.

3. In a bowl, add ricotta, wedges, artichokes, spinach/onion mixture, and mix. When noodles are cooked, reserve 1/4 cup water, drain noodles and add to mixture. Add 1 cup of six cheese blend, and 1/2 cup mozzarella cheese, mix well.

4. Add mixture to a greased casserole dish, top with leftover mozzarella, and because I can, some Pepper Jack cheese.

5. Bake at 425 for 15 minutes.

I had to exchange some of the ingredients. But it still came out very yum.

On her blog she said it was a little bland, so I used the pepper jack to help spice it up a little bit.

Earth Day!

Things I should have done today:

1. Laundry- it’s Earth day…I was conserving water.

2. School work- I like to pretend I know what I am teaching during the week.

3. Clean…well anything in the house.

4. Watch the Yankee- Sox game- but those pansies had a “rain” delay…geez

What I actually did:

1. Spent about 5 hours looking at home decor on pinterest – even though we cannot move until December but it never hurts to be prepared.

2. Ate chicken dip- while being on pinterest.

3. Attempted to watch Yankees classic from July 1st- Jeter makes a catch into the stands. I already knew the outcome so it was kinda boring.

4. Made Earth Day cupcakes!

I got the idea here.

Happy Earth Day! Go hug a tree

Big News

We have a BIG announcement!!!!!

Ok not such a secret announcement…..

We bought a house!!!

Maybe you thought we had a different announcement…

You obviously have not seen all the adult root beer floats I have consumed.

Well maybe having a baby would be quicker then building this house….

This week was a lot of fun.

We made lots of yummy dishes like this, this, and this.

Studied insects and my classroom kiddos made these delicious creations.

Had a couple of adult root beer floats.

Pepper Jack Chicken

While I am not sure I am suppose to – I was so happy to get a short run in this afternoon. I was a light jog and my foot felt good the whole way so maybe the second doctor was right about lack of arch support.

Tomorrow I will use my gym membership and ride a bike just to see if alternating cardio activities will help.

Whoop whoop!

Chicken Meatball Pasta

Happy Wednesday!

Chicken Meatball

I originally saw this recipe on Dashing Dish as a yummy hamburger

1 lb ground chicken

1/2 pack of Spicy Ranch dry dressing packet

1/4 cup salsa

1/4 cup chopped spinach

1/4 cup Pepper Jack Cheese

Olive Oil Sauce

1/2 cup olive oil

3 cloves garlic

1 teaspoon red pepper flakes

2 tbsp pasta water

1 tbsp butter

S&P

1. In a bowl mix (with your hands) chicken, ranch packet, salsa, spinach and cheese. Form into small meatball sized balls, place on foil lined cookie sheet and bake at 425 for 20 minutes- turning about halfway through.

2. While meatballs are cooking cook pasta according to directions, remembering to reserve 2 tablespoons of cooked pasta water for olive oil sauce.

3. In a skillet heat olive oil, and garlic until garlic is browned. Add red pepper flakes, S&P and pasta water. When pasta is cooked add to sauce with meatballs and toss. ** I added some spinach by putting the spinach in a colander and draining pasta over the top.

Off to catch up on New Girl!

Philly Cheese Steak Sloppy Joes

This weekend was a blur.

I officially have a stress fracture. So no running for me.

We looked at 8 million more homes- The good news being we think we have narrowed it down to 4 million.

And I pretended to do laundry but really read like 8 Nora Roberts bodice rippers.

Today was a little bit better because I finally made this yummy treat.

Look at all that cheesy goodness!

 Philly Cheese Steak Sloppy Joes

Adapted from The Lady with the Red Rocker

1 tbsp olive oil

1lb lean ground beef (Rich almost shat himself when he saw real beef in our home)

1 whole onion chopped

1 green pepper chopped

1 cup beef broth

1/4 cup steak sauce (we used garlic and herb flavored)

S&P to taste

Cheese sauce

1 tablespoon butter

1 tablespoon flour

1 cup milk

1 cup shredded Pepper Jack cheese

rolls of some kind (we used french bread)

1. In a large skillet heat olive oil and add beef. Cook for about 5 minutes or until browned. While meat cooks, melt butter in a sauce pan, add flour and whisk in milk. Stir in pepper jack and allow mixture to thicken.

2. Add in peppers, onions, and cook until soft, cooking for another 5 minutes.

3. Add broth, steak sauce, season and cook until bubbling. Reduce to a simmer and let cook another 5-10 minutes. Toast the roll, bun, or whatever carb you use to get this in your tummy.

4. Top carb with meat mixture, pour cheese over the top and sandwich it up.

** I left the cheese mix on the burner because I have no patience and it just worked better that way.**

Spicy Sweet Potato Boats

My foot is still bothering me and instead of risking an ice bath I decided to stick to a arm circuit so that I could still get credit for my activity in my virtual boot camp.

Since I am the unluckiest person alive I am sure I will not be winning the cash prize at the end. But it was still a fun workout and one I could do at home. My favorite kind.

It also allowed me to be the one to clean up the chocolate milk that exploded in our trashcan.

Lucky me.

Being home meant I could monitor the sweet potatoes that had to cook for a whole hour.

So much longer then I think sweet potatoes should take.

It was worth it in the end.

But for some reason there was leftover filling.

I never understand how that happens.

**Photo taken after I ate most of the leftover filling**

Spicy Sweet Potato Boats (serves two or four depending if you have a salad)

2 sweet potatoes

3 spicy turkey sausage links

1/2 cup sweet onion

1/2 cup chopped fresh spinach

1 tbsp butter

1/4 teaspoon sage

1 wedge laughing cow swiss cheese

1/2 cup of Pepper Jack Cheese

S&P to taste

1. Preheat oven to 375. Cover a baking sheet with foil and top with a wire rack. Pierce sweet potatoes with a knife multiple times and place on top of wire rack. Cook for 35-60 minutes. -Mine took the whole 60.

2. While cooking remove sausage from casing and cook in skillet until brown.  Remove sausage with a slated spoon, leaving grease to cook onions.

3. Add 1 tbsp butter to sausage grease, add onions, sage and spinach and let cook for about 5 minutes or until onions are golden. Remove from heat, I just poured it in with the sausage.

4. When sweet potatoes are cooked and slightly cooled, cut in half length wise and spoon out potato filling into a bowl. I left a small layer so that the skin would not collapse. I also used a oven mitt to hold the pototoes because I am impatient. Use a fork or potato masher to mash.

5. Add wedge of laughing cow – the original recipe calls for sour cream and that sounded yuck so I did not use it- and mix until incorporated. Add sausage, and onion mixture, S&P to your liking. Put mixture back into the sweet potato skin.

6. Set oven to broil. Top boats with Pepper Jack Cheese, and broil for 4 minutes or until cheese is bubbly.

I am not sure how the hubby will like it but he went weeknight golfing so his opinion is moo.

Mini Chicken Pot Pie

We finally finished leftovers from Easter.

So I no longer have an excuse for not cooking.

I even remembered to get the chicken out to thaw so I figure this meal is meant to be.

Mini Chicken Pot Pie

1 tube of refrigerated biscuits (10)

2 boneless skinless chicken breast (cooked and cubed)

1 can of Cream of Mushroom Soup

2/3 cup shredded sharp cheddar

1 1/2 cups frozen vegetable medley

teaspoon onion powder

teaspoon dried  parsley flakes

couple grinds black pepper

1. Preheat oven to 400. Grease muffin tin, and press biscuits into cup making little bowls.

2. Mix chicken, soup, cheese, veggies, cheese and spices together. Spoon into biscuit bowls.

3. Bake for 12-15 minutes or until golden brown.

Rich gets credit for cooking the chicken since he is evil helpful and made me an ice bucket for my sore foot.

I lasted about 10 seconds.

I am seriously impressed with people who take ice baths.

I am having serious arch pain when I run, and walk.

WebMD says stress fracture. I should probably actually go to a doctor before panicking.
